- 250g Self Raising Flour
- 1/2 teaspoon Salt
- 1 heaped teaspoon Baking Powder
- 375g Milk (weigh your Milk for accuracy)
- 1 large Egg, beaten
- 25g melted Butter & extra for cooking
- Sunflower Oil for cooking

How to
Mix the Flour, Salt & Baking Powder in a bowl.
In a jug or bowl beat the Egg, add the Milk.
Melt your butter.
Pour the Egg & Milk onto the Flour mixture, add the Butter & whisk until everything is combined into a lovely batter.
Don’t worry about lumps as they will cook out.
Heat a little Sunflower Oil & some (plenty of) butter over a medium heat.
Add 1-2 tablepoons of batter into the pan – see photograph (3 pancakes at a time is easier)
Cook for 3 minutes, flip over and cook for another 3 minutes.
Eat as soon as they are cooked, ignoring anyone banging their knife & fork on the table and asking you to hurry up.
