Blackberry & Aniseed Cordial


  • 1.5kg (3lb) Blackberries
  • 2 Star Anise
  • 2 Litres Cold Water
  • 500g (1lb 2oz) Sugar (to taste, an approximate guide)

A simple to make cordial for a taste of Summer/Autumn. Works equally well with frozen Blackberries for an all-year round tasty drink.

How to

Put the Blackberries in a large pan and add the water & Star Anise. Use a masher or your hands and squish up the Blackberries.

Bring to the boil, then simmer for 10 minutes until your house smells really nice.

Strain the Blackberries. If you want nice clear cordial you should strain very gradually, say over an hour. If you think life is too short, squeeze out the blackberries and settle for cloudy cordial. And tell yourself it tastes better. Because it does.

Add the sugar to the liquid and bring to the boil again, then simmer for another 20 minutes.

You could also remove any ‘scum’ that appears on the surface but it’s tasty scum so i’d leave it alone.

Cool, pour into bottles & store in the fridge to stop it fermenting. You can also freeze the cordial in used plastic milk containers.

Dilute to taste with still or sparkling water, lemonade or a drop of vodka.

And if you went for the cloudy cordial remember to shake the bottle well before use.
