- 1 lb ripe Blackcurrants
- 1 Lemon, juice of
- 2 pints Water
- 1 & 1/2 lb Sugar
Another easy-to-make cordial – Blackcurrant is a Vitamin ‘C’ fest. Vary the Sugar depending on how ripe or flavoursome your Blackcurrants are.
To make Blackcurrant Cordial, place the Blackcurrants & Lemon in a large pan.
Bring to the boil, then turn down the heat & simmer for 10 minutes.
When cool, strain and add Sugar.
Bring to the boil again for 5 minutes.
Remove any ‘scum’ that may appear.
Cool & bottle.
