
Ingredients
- 10-15 large Elderflower heads
- 1kg (2.2lb) Sugar
- 1 unwaxed Lemon or Lime, quartered
- 1 teaspoon Citric Acid
- 3 pints Boiling Water
Elderflower Cordial is late-Spring/early Summer staple. Usually you’re making this throughout the month of May, but this year (2015) ours hasn’t arrived until mid June. Better late that never!
How to
Add the Elderflower heads, Sugar, Lemon or Lime & Citric Acid to a large clean (preferably sterilised) bowl, pan or bucket, pour on the boiling water and mix until the Sugar has dissolved.
Cover with a tea towel and leave for 24 hours.
Strain through a Muslin cloth or nylon straining bag (or fine tea towel).
Bottle and store in the fridge. Freezes well in plastic bottles.
Dilute to taste.
