
Ingredients
- 4 super-ripe (black-skinned) Bananas
- 200g Plain Flour
- 100g Porridge Oats
- 70g Demerara Sugar
- 1 Tablespoon Ginger powder
- 50g chopped Dates
- 100g chopped Walnuts
- 50g melted Unsalted Butter
- 1 teaspoon Baking Powder
- 1 teaspoon Bicarbonate of Soda
- 1 Egg, beaten
- large pinch of Salt
What to do with a bunch of over-ripe Bananas other than make wine? These are easy-to-make, full of good stuff and quite possibly good for you!
How to
Pre-heat your oven to 180c
In a bowl, mash the Bananas in a bowl (see photos).
Combine the dry ingredients in a large bowl – the Flour, Sugar, Ginger, Oats, Dates, Baking Powder, Bicarbonate of Soda, Salt & Walnuts.
Add the Egg & Butter to the Bananas and whisk quickly together.
Tip this into the dry ingredients, and mix with a spoon until there is no dry left.
Spoon the mixture into a silicon baking tray (as shown).
Use a knife or spatula to smooth over the top.
Bake for about 30 minutes until golden brown, texture like sun.
Alternatively use a skewer and check to see if it’s cooked inside (the skewer will come out clean).
